The current Black Forest Restaurant was purchased in April 1997 by Executive Chef George Ettwein and his partners, Carol, Bil and Greg. The three friends (George, Bill and Greg) worked together at the old Black Forest, owned by German Chef Herbert Schlenker. George apprenticed under Chef Schlenker for years and fine-tuned his knowledge of German cuisine.

Chef George went on to the Navy, and in his various deployments was able to moonlight in restaurants and study cusines from around the world. Chef George has created a comprehensive menu that will surely please everyone. George has also penned a children's book, Edge the Fish, which was published in 2001 and received rave reviews.
