George Ettwein, Executive Chef
Chef George is a Navy veteran who had the opportunity to study cuisines from around the world during his various deployments. Apprenticing under Herr Schlenker, the original owner of the Black Forest, he has fine-tuned the art of true German cuisine.  Certified by the American Culinary Federation, he has developed a menu incorporating the skills and talents of the entire kitchen staff to offer patrons a variety of selections certain to please any appetite.


Bill Ettwein, Executive Sous Chef

Chef Bill started cooking in professional kitchens at the tender age of 16 and began working with Herr Schlenker in 1993.  He lends his expertise as a pastry chef to enhance the Black Forest's dessert menu. 

 


Greg Ledford, Executive Sous Chef

Born and raised in Asheville, Chef Greg had the benefit of working with Herr Schlenker for 11 years, honing his skills in the preparation of true German cuisine.  His culinary skills are highlighted in many of the Black Forest's offerings.


Carol Ettwein, Property Manager

Carol takes great pride in managing the Black Forest properties.  Living on-site, she tenderly cares for the grounds, coordinates special events, and is a familiar face to regular patrons.

Carol’s dedication can be traced to her many years of customer service at the Selee Corporation.  Upon her retirement in 2001, the Selee Corporation established the E. Carol Ettwein Excellence in Customer Service Award, bestowed annually to the corporation’s employee demonstrating superior customer support.

Items purchased on her regular excursions to the Black Forest region of Germany have contributed to the authentic Old World atmosphere enjoyed by the patrons of the Black Forest Restaurant.
